RECIPE: CLAYPOT PEPPER SHRIMP

Hi everyone, Yingchi here. Today we are introducing the second dish of our donabe recipes series with the Iga Single Serve Donabe. We are making Clay Pot Pepper Shrimp that can often be found in stir-fry seafood restaurants in Taiwan. This dish is spicy and garlicky. It pairs perfectly with iced cold Taiwan Beer!

Ingredients of Clay Pot Pepper Shrimp

Ingredients 

  • 1 lb of shrimp (Use prawn if available)
  • minced garlic, 10g
  • ginger, sliced, 10g
  • cooking wine, half cup
  • ground black pepper
  • ground white pepper: White pepper is a commonly used spice in Chinese or Taiwanese cuisine. While ground black pepper has a floral, pungent aroma, white pepper has an earthy, more hot/spicy character that you often taste in dishes like hot and sour soup or other stir-fried dishes. It is often combined with salt, roasted Sichuan peppercorns, and five spice powder to create a spice mix seasoning that goes with many fried dishes.
  • salt, 2 tsp
  • sugar, 1tsp

Step 01/02

  • Use scissors to trim the spiky parts of the shrimp head, and remove the the little black line on the bottom of the shrimp.
  • Mix shrimp with salt, sugar, white pepper, and black pepper.
  • Add some cooking oil in the donabe, turn the heat to medium, add minced garlic and sliced ginger. Lightly sauté for a couple of minutes.
  • Add cooking wine and bring it to a boil.

Steps 02/02

  • Add shrimp to the donabe. Mix well with the garlic and ginger.
  • Close the lid. Let the shrimp cook for 2 minutes. Open the lid, stir and cook for about 5 minute. Close the lid again. Continue cooking for about 3 minutes.
  • Wait until the sauce in the pot is almost dry, add a lot of white pepper and black pepper. Stir well, and close the lid and cook for 1 minute.
  • Turn off the heat and serve.

This dish reminds me of those noisy but lively Taiwanese stir fry restaurants where locals go for food that is served fast and hot. Served with cold beer and bold flavored dishes, these stir-fry restaurants are the best place to hang out with friends after work.
